Eggplants come in many colors, with purple and green being the most common.

However, green eggplants are particularly abundant in Liaoning. Many children even think that eggplants are naturally green.

This is mainly credited to the Liaoning Academy of Agricultural Sciences.

Before 2001, the Liaoning region had already cultivated green eggplant varieties such as Liaoqie No. 2 and Shenqie No. 2.

In 2001, the Liaoning Academy of Agricultural Sciences bred the "Zhenlvqie" (Truly Green Eggplant) variety.

This variety is not only high-yielding and highly disease-resistant, but also early-maturing, making it very suitable for the local climate and planting conditions in Liaoning.

Because it was "born" locally and promoted on a large scale, local farmers in Liaoning have mature planting techniques and have formed a very stable planting and sales system. Therefore, it is particularly common to see green eggplants in Liaoning's markets.

Liaoning locals not only use green eggplants to make braised eggplant, but also eat them directly by dipping them in sauce, which is a very distinctive local practice.
